Solution
Regarding the lights, it’s totally fine to leave the lights on.
Vintec wine cabinets are specially designed with dim UV-free LED lights, that don't emit any heat or UV rays - which is what is most damaging to wine. So it's no problem to leave LED lights on in the cellar. Sunlight, which contains a lot of UV rays, is what is most damaging to wine, but also incandescent, halogen bulbs etc. which give off quite a bit of heat.
Regarding the cellaring/serving temperatures: you’ve bought the VWM198PBA which is a multi-zone wine cabinet. It comes with different options:
- Using your cabinet only for cellaring your wines – cellaring mode: If you want to use your cabinets only to mature your wines you can set up your cabinets under “cellaring mode” which will set up a constant temperature at 12 degrees – perfect to enable your wines to age gracefully.
- Using your cabinet to serve your wines at the perfect temperature – multi-zone: if you’re looking at serving reds/whites/sparklings/roses at the right temperature + cellaring some wines, I would recommend to setup your wine cabinet as follows:
- Bottom Temperature: 6 degrees
- Top Temperature: 16 degrees - This will allow a gradation in the temperatures in the cabinet. The bottom part will be perfect for whites/sparklings/roses. I would recommend taking out your wines 20 minutes before serving to let them settle and warm a bit (otherwise the cold will mask the flavours).
- The top part will be perfect for your bigger reds (Shiraz/Cab Sav).
- In the middle part, it will be a perfect space for the wines you’re looking at cellaring + lighter reds (Pinot Noir, some Grenache).
With VWM198PBA, options are vast and depend on what you’re trying to do either focusing on cellaring or serving, or a bit of both. See below a guide for serving temperatures – should be helpful.
